Terroir
A blend of several plots of our Estate. Plots of Oxfordian limestones, locally known as 
“Caillottes” and Kimmeridgian marls

Growing methods
Howing or superficial tilling
The pruning is short, single Guyot
De-budding at spring
Practice of integrated crop protection

The vines
Grape variety is Pinot Noir
Planting density from 6,800 to 8,500 vines/hectare

Vinification
Harvest hand-picked and brought to the winery in 40-kg crates
Table-sorted and completely destemmed 
Tanks with automatic punching of the cap
Maceration for about 30 days at controlled temperature
Pumping-over and punching the cap based on daily tastings 
Free-run juice and press-juice blended on devatting 
Ageing 70% in barrels and 30% stainless steel tanks for 11 months
Blended and racked in September 2015 for another 8 months ageing in tanks
Bottled in June 2016

Tasting notes 
Visual: ruby red, brilliant 
Nose: intense aroma of Pinot, notes of leather and roasting
Palate: crunchy grape, cherry fruitstone, a bit of faded rose, beautiful texture, the oak is just a support to give complexity, the tannins are silky, mineral on the finish reminding the terroir
You can keep this wine for 6 to 8 years
Serving temperature: 13 to 14°
Perfect match with white meat, veal or poultry, duckling and parmentier of duck
