The vines
Planted to Sauvignon Blanc grapes
Planting density: 6,800 to 8,800 vines/hectare
Vinification
The grapes are handpicked
The entire bunches of grapes are fed into pneumatic presses via a conveyor belt
Light pneumatic pressing
Cold settling for 24 - 36 hours at approximately 6°C
Fermentation in temperature-controlled stainless steel tanks and 10% oak maturation. 10 months lees ageing and 8 more months on fine lees after racking and blending
Filtered and bottled in March 2023
Tasting notes 2021
Visual: golden yellow with silver reflections
Nose: intense and complex aromas, fruit dominated (orange, mango) with a hint of mint and green pepper giving pleasant freshness
Palate: nicely balanced between roundness and freshness; juicy, generous texture revealing citrus fruit (orange, madarin), exotic flavours in the finish, long lasting with a light mineral aftertaste
Serving temperature: 10°C
Food pairings: perfect match with sea food and fish dishes
