Sancerre Blanc Les Calcaires

Terroir
A blend of grapes hailing from several plots of the estate
These plots feature Oxfordian limestones “caillottes” and “griottes” 

Growing methods
Cover crops are grown between the rows or the soil is hoed
Single Guyot pruning
Integrated crop protection
Organic fertilizers have been used since 1989

The vines
Planted to Sauvignon Blanc grapes
Planting density: 6,800 to 8,800 vines/hectare

Vinification
The grapes are handpicked
The entire bunches of grapes are fed into pneumatic presses via a conveyor belt
Light pneumatic pressing
Cold settling for 24  till 36 hours at approximately 6°C
Fermentation in temperature-controlled stainless steel vats and a small part in oak barrel The wines are fined
Racked and filtered before bottling in September 2018

Tasting notes 2017
Visual: limpid, very pale
Nose: nice olfactory maturity, with notes of black currant and white fruit
Palate: mineral (chalky notes of the terroir) with a nice bitterness, notes of citrus like yuzu
Serving temperature: 9 to 10°C
To serve as an aperitif or match with freshwater fish and red mullet, and the local goat cheese, "Crottin de Chavignol"
