A blend of grapes hailing from several plots of the estate
These plots feature Oxfordian limestones “caillottes” and “griottes”

The vines
Planted to Sauvignon Blanc grapes
Planting density: 6,800 to 8,800 vines/hectare
Vinification
The entire bunches of grapes are fed into pneumatic presses via a conveyor belt
Light pneumatic pressing
Cold settling for 24 hours at approximately 6°C
Fermentation in temperature-controlled stainless steel vats
The wines are fined, then chilled.
Racked in August and filtered
Bottled in September 2017
Tasting notes
Visual: limpid, pale yellow
Nose: mineral, ripe white-fleshed fruit, apricot fruitstone
Palate: mineral (chalky notes of the terroir) with a nice acidity, notes of elder tree and apricot, well-balanced
Serving temperature: 9 to 10°C
To serve as an aperitif or match with freshwater fish and red mullet, and the local goat cheese, "Crottin de Chavignol"
